This is my first recipe in English and the photos are once again copied directly from my Croatian blog’s editor.
These used to be some of my favourites cookies that my granny was baking for us. She used to call them ‘Home cookies’ and for me they are just grandma’s cookies.
I make them for many occassions, cutting different shapes. If it is Valentines, I’ll cut little hearts and put red sugar coating, in Summer I may do them without the sugar icing/glaze but adding some lavendel from my garden into the dough. For winter and Christmas time, I decided to use the snowflakes cutters. It is also possible to put a hole into the cut cookie before baking and after baking and cooling down, you could tie and hang the cookies as a decoration. My children love these and normally make various animal shapes.
630 g flour
250 g butter
250 g sugar
pinch of salt
optional: organic lavendel, 2 teaspoons
about 250 g powder sugar
lemon or lime juice (about 2-4 teaspoons)
food colours (blue in this case)
1. Mix the eggs with sugar and add soft butter. Slowly add flour and the rest of ingredients. Mix well and do not add flower too quickly. Wrap the dough in an aluminium foil (or cling film) and leave for half an hour in the fridge.
2. Roll the dough about 0.5 – 1 cm thick and cut shapes. If necessary add a teaspon of water or cream to make it roll better. It may be easier to roll over the cling film or a plastic foil.
Preheat the oven at 180°C.
3. Bake about 10-15 minutes. I like them crispier so I wait until they get brownish on edges. However, this is really not necessary.
4. Cool well and prepare the powdered sugar icing by slowly adding the lemon juice. Two teaspoons may not seem enough in the beginning but do not add more until well mixed with the sugar. If you wish, you can also add water or orange juice but it is too sweet for my taste. Spread over the cookies.
